
Ingredients
2 lb chicken chunks (boneless chicken breasts or thighs)
1 cup pineapple juice
¼ cup brown sugar (firmly packed)
⅓ cup soy sauce
2 cloves garlic, minced (optional but recommended)
1 tsp ground ginger (optional)
1 tbsp cornstarch + 2 tbsp water (optional, for thickening)
Instructions
Prepare the chicken
Cut the chicken into bite-sized chunks and place them in the crockpot.
Make the sauce
In a bowl, mix pineapple juice, brown sugar, soy sauce, garlic, and ginger until well combined.
Cook
Pour the sauce over the chicken.
Cook on LOW for 4–5 hours or
HIGH for 2–3 hours, until the chicken is tender and fully cooked.
Optional: Thicken the sauce
About 20–30 minutes before serving, mix cornstarch and water, stir it into the crockpot, and let it cook until the sauce thickens.
Serve
Serve hot over steamed rice, noodles, or with vegetables.
Tips
Add pineapple chunks or bell peppers for extra flavor.
For a spicy kick, add a little chili sauce or red pepper flakes.
This also works great with chicken thighs for extra juiciness.
