
Ingredients
2 cups grated cheese (cheddar, gouda, or mozzarella mix)
2 eggs
1 cup flour
1 teaspoon baking powder
1 small onion, finely chopped
2 tablespoons chopped parsley or cilantro
1 small garlic clove, minced (optional)
Salt & black pepper to taste
A splash of milk or water (only if the batter is too thick)
Oil for frying
Instructions
- In a bowl, whisk the eggs.
- Add cheese, onion, parsley/cilantro, garlic, salt, and pepper. Mix well.
- Add the flour and baking powder.
- Mix to form a thick batter. If it is too dry, add 1–2 tablespoons of milk or water.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the batter into the hot oil.
- Fry until golden brown on both sides (about 2–3 minutes per side).
- Remove and place on paper towels to drain excess oil.
- Serve hot with your favorite dip.
Tips
Add chopped olives, corn, or grated carrot for extra flavor.
For a Moroccan twist, you can add a pinch of cumin or paprika.
