
🧾 Ingredients:
1 sheet puff pastry (thawed, if frozen)
1½ cups fresh spinach (or thawed frozen spinach, squeezed dry)
½ cup feta cheese (crumbled)
½ cup ricotta or cream cheese
1 egg (for the filling)
1 egg yolk (for brushing)
1 tbsp olive oil or melted butter
Salt & pepper to taste
Optional: sesame or nigella seeds for topping
👩🍳 Instructions:
- Prepare the filling
Sauté the spinach in a pan for a few minutes until wilted.
Let it cool slightly, then mix with feta, ricotta, one egg, salt, and pepper in a bowl.
- Prepare the pastry
Roll out the puff pastry sheet on a lightly floured surface.
Spread the spinach-cheese mixture evenly over the sheet, as shown in the first image.
- Fold and cut
Fold the pastry sheet over to cover the filling.
Cut into triangles (or squares, depending on your preference).
- Brush and top
Place the triangles on a parchment-lined baking sheet.
Brush each with egg yolk for a golden color.
Sprinkle sesame or nigella seeds on top (optional).
- Bake
Bake in a preheated oven at 200°C (400°F) for 20–25 minutes, or until golden brown and puffed up.
- Serve
Let cool slightly before serving. Enjoy warm or at room temperature!
