
🛒 Ingredients:
4 boneless, skinless chicken breasts
1 cup fresh spinach, chopped
1/2 cup ricotta cheese (or cream cheese)
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 garlic cloves, minced
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
👩🍳 Directions:
Preheat oven to 375°F (190°C). Lightly grease a baking dish.
Make the filling: In a bowl, combine spinach, ricotta, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper. Mix well.
Prepare chicken: Cut a pocket into each chicken breast, being careful not to cut all the way through.
Stuff: Spoon the spinach cheese mixture evenly into each pocket. Secure with toothpicks if needed.
Sear chicken: Heat olive oil in a skillet over medium-high heat. Sear chicken for 2–3 minutes per side until golden.
Bake: Transfer to baking dish and bake for 20–25 minutes, or until chicken reaches 165°F internally.
Serve: Let rest for a few minutes, then slice and enjoy with pasta, rice, or a fresh salad.
