Ingredients:
- 2 cups corn kernels (fresh, canned, or frozen and thawed)
- 1 can (14 oz) creamed corn
- 1 cup milk or half-and-half
- 2 large eggs
- 2 tbsp butter (melted)
- 1 tbsp sugar (optional, for a sweeter flavor)
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp all-purpose flour or cornstarch (for thickening)
- 1 ½ cups shredded cheese (cheddar, mozzarella, or a mix)
- ½ cup grated Parmesan (optional, for topping)
Instructions:
- Preheat oven to 180°C (350°F). Grease a medium-sized baking dish.
- Mix wet ingredients: In a large bowl, whisk together eggs, milk, melted butter, sugar, salt, and pepper.
- Add corn: Stir in corn kernels and creamed corn.
- Thicken mixture: Sprinkle in flour (or cornstarch) and mix until combined.
- Add cheese: Stir in 1 cup of shredded cheese into the mixture.
- Pour & top: Transfer mixture to the prepared baking dish. Sprinkle remaining cheese (and Parmesan, if using) evenly on top.
- Bake uncovered for 40–50 minutes, or until the top is golden brown and slightly crispy, and the center is set.
