Avocado, Mozzarella, and Tomato Grilled Cheese

Ingredients:

8 slices sourdough bread (or sandwich bread of choice)

1 ripe avocado, sliced

2 medium ripe tomatoes, sliced

8 ounces fresh mozzarella, sliced

2 tablespoons fresh basil leaves (optional)

2 tablespoons unsalted butter, softened

Pinch of salt and black pepper

Directions:

  1. Spread butter evenly on one side of each bread slice.
  2. Layer mozzarella, tomato slices, and avocado slices between two pieces of bread, buttered sides facing out. Add fresh basil if using.
  3. Heat a skillet or griddle over medium heat. Place sandwiches in the skillet and cook 3–4 minutes per side until the bread is golden brown and the mozzarella is melted.
  4. Slice in half and serve warm.

Total Time:18 minutes
