Old South Coca-Cola Pork Loin
Ingredients:
2 to 3 pounds pork loin
1 cup Coca-Cola
1 cup ketchup
1/2 cup brown sugar
1/4 cup apple cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon cayenne pepper (optional for heat)

  1. Preheat your oven to 325°F (165°C).
  2. In a large bowl, combine Coca-Cola, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, smoked paprika, black pepper, salt, and cayenne pepper. Mix well until the sugar is dissolved.
  3. Place the pork loin in a large baking dish or roasting pan. Pour the Coca-Cola mixture over the pork, ensuring it is well coated.
  4. Cover the dish tightly with aluminum foil and bake in the preheated oven for 2 to 2.5 hours, or until the pork reaches an internal temperature of 145°F (63°C).
  5. Remove the foil for the last 30 minutes of cooking to allow the top to caramelize.
  6. Once cooked, remove the pork from the oven and let it rest for 10-15 minutes before slicing.
  7. Serve with the pan juices drizzled over the top.
