
Old South Coca-Cola Pork Loin
Ingredients:
2 to 3 pounds pork loin
1 cup Coca-Cola
1 cup ketchup
1/2 cup brown sugar
1/4 cup apple cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon cayenne pepper (optional for heat)
- Preheat your oven to 325°F (165°C).
- In a large bowl, combine Coca-Cola, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, smoked paprika, black pepper, salt, and cayenne pepper. Mix well until the sugar is dissolved.
- Place the pork loin in a large baking dish or roasting pan. Pour the Coca-Cola mixture over the pork, ensuring it is well coated.
- Cover the dish tightly with aluminum foil and bake in the preheated oven for 2 to 2.5 hours, or until the pork reaches an internal temperature of 145°F (63°C).
- Remove the foil for the last 30 minutes of cooking to allow the top to caramelize.
- Once cooked, remove the pork from the oven and let it rest for 10-15 minutes before slicing.
- Serve with the pan juices drizzled over the top.
