
MEATBALL LASAGNA ROLL-UPS
Ingredients:
1 lb ground beef
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
1 tsp Italian seasoning
Salt and pepper to taste
12 lasagna noodles
2 cups marinara sauce
1 cup ricotta cheese
1 cup shredded mozzarella cheese
Directions:
Preheat oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente. Drain and lay flat on a baking sheet.
In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
Heat a large skillet over medium heat and cook the meatballs until browned on all sides. Remove from heat.
Spread a layer of ricotta cheese on each lasagna noodle, then add a few meatballs on top. Roll up each noodle and place seam-side down in a baking dish.
Pour marinara sauce over the roll-ups and top with shredded mozzarella cheese.
Bake for 25-30 minutes, or until the cheese is melted and bubbly.
