Ingredients:

  • 1 lb (450g) breakfast sausage (pork or turkey), cooked and crumbled
  • 6 large eggs
  • 2 cups whole milk (or half-and-half for creamier texture)
  • 2 cups shredded cheddar cheese (or a mix of cheddar & mozzarella)
  • 1 cup biscuit mix (like Bisquick)
  • 1 medium onion, finely diced (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder (optional)
  • ½ tsp paprika (optional, for color)

Instructions:

  1. Preheat Oven: 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook Sausage: In a skillet, cook sausage (and onion, if using) over medium heat until browned. Drain excess grease.
  3. Mix Wet Ingredients: In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and paprika.
  4. Add Biscuit Mix: Stir in biscuit mix until smooth.
  5. Layer Dish:
    • Spread the cooked sausage evenly in the baking dish.
    • Sprinkle 1 ½ cups of cheese over the sausage.
    • Pour the egg mixture over everything.
    • Top with remaining cheese.
  6. Bake: Place in the oven and bake 40–45 minutes, until golden brown on top and set in the middle (a knife inserted should come out clean).
  7. Cool & Serve: Let it rest 5–10 minutes before cutting into squares or wedges.

  • Add bell peppers, spinach, or mushrooms for extra flavor.
  • Use spicy sausage if you want a kick.
  • You can prepare it the night before, refrigerate, and bake in the morning.
