This over-the-top baked potato is packed to the max with juicy steak, melty cheese, smoky bacon, and all the creamy toppings your heart desires. It’s like your favorite steakhouse dinner—all stuffed into a crispy, fluffy potato shell.

ingredients:

• 4 large russet potatoes, scrubbed

• 1 lb steak (ribeye, sirloin, or your fave), cut into bite-sized pieces

• 1 tbsp olive oil

• Salt & pepper to taste

• 1 cup shredded cheddar cheese

• ½ cup sour cream

• 4 slices bacon, cooked and crumbled

• 2 green onions, sliced

• 2 tbsp butter

• Optional: garlic powder, hot sauce, ranch drizzle, chives

bake the potatoes

Preheat oven to 400°F (200°C). Pierce potatoes with a fork, rub with a little oil and salt, and bake directly on the oven rack for 45–60 minutes, until skins are crispy and insides are soft.

sear the steak

While the potatoes bake, heat olive oil in a skillet over medium-high heat. Season steak pieces with salt and pepper (and a little garlic powder, if you like). Sear until nicely browned and cooked to your preferred doneness. Set aside.
