Pumpkin Flan with Caramel
Ingredients
¾ cup sugar (for caramel)

1 can (15 oz) pumpkin puree

1 can (14 oz) sweetened condensed milk

1 can (12 oz) evaporated milk

3 eggs

1 tsp vanilla extract

1 tsp pumpkin pie spice

Preparation
Melt sugar in a saucepan over medium heat until golden; quickly pour into a round baking dish.

In a blender, mix pumpkin, milks, eggs, vanilla, and spice until smooth.

Pour over caramel in the dish.

Place in a water bath and bake at 350°F (175°C) for 50–60 minutes, until set.

Cool, then chill for at least 4 hours.

Invert onto a plate to serve.
