Ingredients
4 medium zucchinis, sliced lengthwise into thin strips
1 pound ground beef
1 cup ricotta cheese
2 cups marinara sauce (sugar-free and low-carb)
1 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1 egg
1 tablespoon olive oil
TWO cloves garlic, minced
Salt and pepper, to taste
Instructions:
Preheat the oven to 375°F.
Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook for 1 minute.
Add the ground beef to the skillet and cook until browned, breaking up any clumps with a wooden spoon.
Add the marinara sauce to the skillet and stir to combine with the beef. Reduce the heat to low and let simmer for 5-10 minutes.
In a mixing bowl, combine the ricotta cheese, egg, parmesan cheese, salt, and pepper.
Take a slice of zucchini and spread a tablespoon of the ricotta mixture on one side. Top with a spoonful of the beef and marinara mixture.
Roll up the zucchini slice and place seam-side down in a baking dish(9×13 inch).
Repeat steps 6 and 7 with the remaining zucchini slices and filling.
Top the zucchini rolls with the shredded mozzarella cheese.
Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
Let it get cool for a few minutes.
Serve!
