Savoury Cheese Muffins
These delightful muffins taste like cheesy garlic bread in muffin form! Perfect for appetizers, breakfast, or as a side dish.
Ingredients:
Butter and Cheese:
– 3 tablespoons (50g) salted butter (or unsalted butter + salt)
– 2 garlic cloves, crushed
– 2 cups (200g) grated cheddar cheese
Dry Ingredients:
– 2 cups (300g) plain flour (all-purpose flour)
– 1 ½ teaspoons baking powder
– ½ teaspoon baking soda (bi-carb soda)
– ½ teaspoon salt
Wet Ingredients:
– 1 large egg (about 60g / 2 oz), lightly whisked
– 1 cup milk (full or low fat)
– ¼ cup (60g) sour cream (or plain yogurt)
– ⅓ cup (85ml) vegetable oil (or any plain oil, not olive oil)
– ¼ cup finely chopped fresh parsley
– 1 garlic clove, crushed
Instructions:
1. Preheat the Oven:
– Preheat your oven to 180°C (350°F) for standard or 160°C (320°F) for fan-assisted.
2. Prepare the Butter and Garlic:
– Place the butter and crushed garlic in a microwave-proof bowl and melt in 30-second bursts, mixing in between.
– Brush a 12-hole standard muffin tin generously with the melted butter, ensuring to include some garlic. Reserve some butter for brushing the tops later.
3. Mix the Dry Ingredients:
– In a bowl, whisk together the plain flour, baking powder, baking soda, and salt.
4. Mix the Wet Ingredients:
– In a separate bowl, whisk together the lightly beaten egg, milk, sour cream, vegetable oil, chopped parsley, and crushed garlic.
5. Combine Wet and Dry Ingredients:
– Pour the wet ingredients into the dry ingredients bowl. Mix gently about 8 times.
– Add the grated cheddar cheese and mix as few times as possible, just to incorporate any remaining bits of flour (no more than 7 big stirs for soft muffins).
6. Fill the Muffin Tin:
– Divide the batter between 11 holes in the muffin tin (using an ice cream scooper works well). The batter should be thick and fill the muffin tin to the top.
7. Bake:
– Bake in the preheated oven for 22-25 minutes, or until the muffins are golden, crusty, and spring back when touched in the center.
8. Finish and Serve:
– Remove the muffins from the oven and transfer them to a cooling rack. Brush the tops with the remaining melted butter (microwave again if needed) and allow to cool slightly before enjoying!
