Creamy Vegetable & Herb Sandwich Spread
Ingredients:
- 1 cup cream cheese (softened) or mayonnaise (or a mix of both)
- 1 small carrot, grated
- 2 tbsp finely chopped bell pepper (any color)
- 2 tbsp finely chopped green onion or chives
- 2 tbsp finely chopped parsley or cilantro
- 1 garlic clove, minced (optional)
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- 1/4 tsp chili flakes or paprika (optional)
- 1 tbsp lemon juice or vinegar (optional, for tang)
Instructions:
- In a medium bowl, add the cream cheese or mayo. Mix until smooth.
- Add the grated carrot, bell pepper, green onion, and parsley.
- Stir in the garlic, salt, pepper, and optional spices or lemon juice.
- Mix until everything is evenly combined.
- Chill for at least 30 minutes for the flavors to meld.
- Spread on bread, toast, crackers, or use as a veggie dip.
