Creamy Vegetable & Herb Sandwich Spread

Ingredients:

  • 1 cup cream cheese (softened) or mayonnaise (or a mix of both)
  • 1 small carrot, grated
  • 2 tbsp finely chopped bell pepper (any color)
  • 2 tbsp finely chopped green onion or chives
  • 2 tbsp finely chopped parsley or cilantro
  • 1 garlic clove, minced (optional)
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/4 tsp chili flakes or paprika (optional)
  • 1 tbsp lemon juice or vinegar (optional, for tang)

Instructions:

  1. In a medium bowl, add the cream cheese or mayo. Mix until smooth.
  2. Add the grated carrot, bell pepper, green onion, and parsley.
  3. Stir in the garlic, salt, pepper, and optional spices or lemon juice.
  4. Mix until everything is evenly combined.
  5. Chill for at least 30 minutes for the flavors to meld.
  6. Spread on bread, toast, crackers, or use as a veggie dip.
