🍲 Rustic Rabbit Stew Recipe
Ingredients:
- 1.5–2 kg rabbit (cut into pieces)
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 potatoes, diced
- 1 cup dry white wine (optional)
- 3 cups chicken or vegetable stock
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- 2 bay leaves
- Salt and black pepper to taste
- Chopped parsley (for garnish)
Instructions:
- Brown the rabbit:
- Heat olive oil in a large pot over medium-high heat.
- Season rabbit pieces with salt and pepper.
- Brown them in batches until golden, about 4–5 minutes per side. Remove and set aside.
- Sauté vegetables:
- In the same pot, add onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
- Deglaze:
- Pour in the white wine to deglaze the pan, scraping up any browned bits. Let it simmer for 2–3 minutes.
- Simmer:
- Add tomato paste, herbs, potatoes, and stock.
- Return the rabbit to the pot.
- Bring to a boil, then reduce heat, cover, and simmer for about 1.5 hours, or until rabbit is tender.
- Finish:
- Adjust seasoning with salt and pepper.
- Garnish with fresh parsley before serving.
