🍲 Rustic Rabbit Stew Recipe

Ingredients:

  • 1.5–2 kg rabbit (cut into pieces)
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 potatoes, diced
  • 1 cup dry white wine (optional)
  • 3 cups chicken or vegetable stock
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • 2 bay leaves
  • Salt and black pepper to taste
  • Chopped parsley (for garnish)

Instructions:

  1. Brown the rabbit:
    • Heat olive oil in a large pot over medium-high heat.
    • Season rabbit pieces with salt and pepper.
    • Brown them in batches until golden, about 4–5 minutes per side. Remove and set aside.
  2. Sauté vegetables:
    • In the same pot, add onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
  3. Deglaze:
    • Pour in the white wine to deglaze the pan, scraping up any browned bits. Let it simmer for 2–3 minutes.
  4. Simmer:
    • Add tomato paste, herbs, potatoes, and stock.
    • Return the rabbit to the pot.
    • Bring to a boil, then reduce heat, cover, and simmer for about 1.5 hours, or until rabbit is tender.
  5. Finish:
    • Adjust seasoning with salt and pepper.
    • Garnish with fresh parsley before serving.
