For the Muffins
2 cups all-purpose flour
½ cup granulated sugar
¼ cup brown sugar
2 tsp baking powder
1 tsp cinnamon
¼ tsp salt
½ cup milk
⅓ cup oil or melted butter
2 eggs
1 tsp vanilla extract
Cream Cheese Filling
8 oz cream cheese, softened
¼ cup powdered sugar
½ tsp vanilla extract
Cinnamon Swirl (optional but recommended)
2 tbsp melted butter
2 tbsp brown sugar
½ tsp cinnamon
👩🍳 Instructions
Prepare the Cream Cheese Filling
In a bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
Set aside.
Make the Muffin Batter
Preheat oven to 375°F / 190°C.
Line or grease a muffin pan.
In a bowl, whisk flour, sugars, baking powder, cinnamon, and salt.
In another bowl, whisk milk, oil (or butter), eggs, and vanilla.
Combine wet and dry ingredients just until mixed.
Fill the Muffin Pan
Add a spoonful of batter to each muffin cup.
Add 1 tablespoon of cream cheese filling to the center.
Top with more batter to cover.
Add Cinnamon Swirl
Mix melted butter, brown sugar, and cinnamon.
Drizzle lightly over each muffin and gently swirl with a toothpick.
Bake
Bake for 18–22 minutes, until tops are set and lightly golden.
Centers will remain soft and gooey.
Serve
Cool for 5–10 minutes.
