Ingredients (Makes 12–16 squares)

6 tbsp unsalted butter

450g (16 oz) mini marshmallows

1½ tbsp cherry gelatin powder (non-sugar-free)

6 cups Rice Krispies cereal

10 oz dark chocolate melting wafers (or chopped dark chocolate), melted

Sprinkles (optional, for decoration)

Instructions

1. Prepare the Pan:

Grease a 9×13-inch baking dish with nonstick spray or butter. For thicker bars, use a 9-inch square pan instead.

2. Melt Marshmallows and Butter:

In a large saucepan over low heat, melt the butter and marshmallows, stirring constantly until smooth.

3. Add Gelatin Flavoring:

Stir in the cherry gelatin powder until fully incorporated. The mixture will turn a lovely pink color while infusing a bold cherry flavor.

4. Mix in Cereal:

Remove from heat and gently fold in the Rice Krispies cereal until evenly coated.

5. Press Into Pan:

Using lightly damp hands (to prevent sticking), press the mixture firmly but gently into the prepared pan. Avoid pressing too hard to keep the treats light and chewy.

6. Cool Slightly:

Let the mixture set at room temperature for about 10–15 minutes before topping.

7. Drizzle with Chocolate:

Spread or drizzle the melted dark chocolate evenly over the top. If desired, sprinkle with festive sprinkles for extra flair.

8. Let Set Completely:

Allow the treats to cool and firm up at room temperature for about 1 hour, or place in the fridge to speed up the process.

9. Slice and Serve:

Once completely cooled, cut into squares and enjoy!
