Zest Lime Shrimp and Avocado Salad KO

Ingredients:

  1. 1 pound cooked, peeled, and chopped jumbo shrimp
    ¼ cup chopped red onion
    1 medium tomato, diced
    1 medium avocado, diced
    1 jalapeño, seeds removed and finely diced (optional)
    2 tablespoons fresh lime juice
    1 tablespoon extra-virgin olive oil
    1 tablespoon chopped fresh cilantro
    ¼ teaspoon kosher salt
    Freshly ground black pepper, to taste

Directions:

Marinate the Onion:
In a small bowl, combine the chopped red onion, fresh lime juice, extra-virgin olive oil, kosher salt, and a few grinds of black pepper.
Let the mixture sit for at least 5 minutes to mellow the flavor of the onion.

Combine the Salad Ingredients:
In a large mixing bowl, combine the chopped shrimp, diced tomato, diced avocado, and diced jalapeño (if using).
Pour the marinated onion mixture over the shrimp and vegetables.
Add the chopped fresh cilantro.
Gently toss all the ingredients together until well combined.

Adjust Seasoning and Serve:
Taste the salad and adjust the seasoning with additional salt and pepper as needed.
Serve immediately, or refrigerate for up to 30 minutes to allow the flavors to meld.
