Treat yourself to a slice of this heavenly Caramel Chocolate Chip Cheesecake! The perfect blend of creamy cheesecake, chocolate chips, and rich caramel.
Ingredients:
2 cups chocolate cookie crumbs
1/2 cup melted butter
3 packages (8 oz each) cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1 cup semi-sweet chocolate chips
1/2 cup caramel sauce
Directions:
Preheat oven to 325°F (165°C).
In a medium bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
Add the eggs, one at a time, beating well after each addition.
Fold in the chocolate chips.
Pour half of the cheesecake batter over the crust. Drizzle half of the caramel sauce over the batter. Add the remaining batter and drizzle the rest of the caramel sauce on top.
Use a knife to gently swirl the caramel into the cheesecake batter.
Bake for 55-60 minutes, or until the center is set and the top is lightly browned.
Allow the cheesecake to cool completely in the pan before refrigerating for at least 4 hours or overnight.
Before serving, drizzle additional caramel sauce over the top if desired.
