Ingredients:

4 cups (360g) small broccoli florets, finely chopped
1 large crisp apple (like Honeycrisp, Fuji, or Gala), cored and diced
1 cup (120g) shredded carrots
1/4 cup (40g) red onion, finely minced
1/2 cup (70g) dried cranberries or raisins
1/4 cup (35g) sunflower seeds or chopped pecans/walnuts
For the Creamy Dressing:
1/2 cup (120g) vegan mayonnaise
2 tablespoons (30ml) apple cider vinegar
1 tablespoon (15ml) maple syrup or agave nectar
1 teaspoon (5g) Dijon mustard
1 teaspoon (3g) poppy seeds (optional)
Salt and freshly ground black pepper to taste

Directions:
1. In a large mixing bowl, combine the finely chopped broccoli florets, diced apple, shredded carrots, minced red onion, dried cranberries (or raisins), and sunflower seeds (or nuts).
2. In a separate small bowl, prepare the dressing. Whisk together the vegan mayonnaise, apple cider vinegar, maple syrup (or agave), Dijon mustard, and poppy seeds (if using).
3. Season the dressing with salt and freshly ground black pepper to your liking. Whisk again until smooth and well combined.
4. Pour the creamy dressing over the broccoli and apple mixture in the large bowl.
5. Toss everything together gently but thoroughly, ensuring all the ingredients are evenly coated with the dressing.
6. For best flavor, cover the slaw and refrigerate for at least 30 minutes before serving. This allows the flavors to meld together.
7. Toss again just before serving.
