Strawberry Custard Cake: A Soft and Delicious Dessert

Ingredients:

For the Cake Batter:

  • 2 eggs
  • 300 g flour
  • 250 g strawberries (plus 4–5 for decoration)
  • 150 g sugar
  • 80 ml vegetable oil
  • 80 ml milk
  • Lemon zest
  • 16 g baking powder
  • A pinch of salt

For the Custard (Crème Anglaise):

  • 1 egg
  • 250 ml milk
  • 80 g sugar
  • 25 g flour
  • Vanilla (or vanilla extract)
  • Lemon zest

Instructions:

  1. Make the Custard:
    In a bowl, whisk together the egg, sugar, flour, vanilla, and milk.
    Pour the mixture into a saucepan and cook over medium heat, stirring constantly, until it thickens.
    Cover with plastic wrap and let it cool completely.
  2. Prepare the Cake Batter:
    In a large bowl, whisk the eggs, sugar, lemon zest, and salt until light and fluffy.
    Add the milk and oil, mixing well.
    Sift in the flour and baking powder, then fold in the diced strawberries.
  3. Assemble the Cake:
    Pour the batter into a greased and floured cake pan.
    Spoon the cooled custard on top and decorate with the extra fresh strawberries.
  4. Bake:
    Bake in a preheated oven at 180°C (350°F) for 45–50 minutes, or until golden and a toothpick inserted comes out clean.
  5. Serve:
    Let the cake cool, dust with powdered sugar, slice, and enjoy!
