Sicilian Pistachio Cake

 

Ingredients:

1 cup shelled pistachios, finely ground

1 cup all-purpose flour

1 tsp baking powder

¼ tsp salt

½ cup unsalted butter, softened

¾ cup sugar

3 eggs

½ cup plain yogurt or sour cream

1 tsp vanilla extract

Zest of 1 lemon (optional)

 

Preparation:

Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.

 

In a bowl, whisk together flour, ground pistachios, baking powder, and salt.

 

In another bowl, cream butter and sugar, then beat in eggs one at a time. Add yogurt, vanilla, and lemon zest.

 

Gradually mix in dry ingredients until just combined.

 

Pour into the pan and bake 30–35 minutes or until a toothpick comes out clean. Cool before serving.
