Peach Pecan Bread

Ingredients:

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1/4 cup plain Greek yogurt

1 teaspoon vanilla extract

1 1/2 cups fresh peaches, peeled and chopped

3/4 cup chopped pecans

Optional: Turbinado sugar for topping

Directions:

Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line with parchment paper.

In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg. Set aside.

In a large bowl, cream the softened butter and sugar until light and fluffy.

Add eggs one at a time, beating well after each addition. Mix in Greek yogurt and vanilla extract.

Gradually add dry ingredients to the wet mixture, stirring just until combined.

Fold in the chopped peaches and pecans gently with a spatula.

Pour batter into the prepared loaf pan and smooth the top. Sprinkle with turbinado sugar if desired.

Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.

Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
