Moist Vanilla Butter Cake Recipe

Ingredients:
- 2 ½ cups all-purpose flour
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 ¾ cups granulated sugar
- 4 large eggs, at room temperature
- 1 tablespoon vanilla extract
- 1 cup whole milk, at room temperature (or use buttermilk for a richer flavor)
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour either two 9-inch round cake pans or a 9×13-inch baking pan.
- In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and sugar together until the mixture is light and fluffy—this takes about 3 to 5 minutes using a hand or stand mixer.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Gradually add the dry ingredients in three parts, alternating with the milk. Begin and end with the dry mixture. Stir gently and just until everything is combined—avoid overmixing.
- Pour the batter into your prepared pan(s) and smooth out the tops with a spatula.
- Bake for 28 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pans for about 10 minutes, then remove and transfer to a wire rack to cool completely.
