Moist Vanilla Butter Cake Recipe

Ingredients:

  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs, at room temperature
  • 1 tablespoon vanilla extract
  • 1 cup whole milk, at room temperature (or use buttermilk for a richer flavor)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour either two 9-inch round cake pans or a 9×13-inch baking pan.
  2. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and sugar together until the mixture is light and fluffy—this takes about 3 to 5 minutes using a hand or stand mixer.
  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  5. Gradually add the dry ingredients in three parts, alternating with the milk. Begin and end with the dry mixture. Stir gently and just until everything is combined—avoid overmixing.
  6. Pour the batter into your prepared pan(s) and smooth out the tops with a spatula.
  7. Bake for 28 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Allow the cake to cool in the pans for about 10 minutes, then remove and transfer to a wire rack to cool completely.
