Mashed Potato Pancakes with Meat Filling
☑️ Ingredients:
For the Mashed Potato Dough:
2 cups cold mashed potatoes
1 egg
1/3 cup flour (plus more for dusting)
Salt and pepper, to taste
For the Meat Filling:
1/2 lb ground beef or turkey
1/2 small onion, finely chopped
1 garlic clove, minced
1/2 tsp paprika
Salt and pepper, to taste
1 tbsp oil for cooking
For Frying:
2 tbsp oil or butter
Optional: sour cream or yogurt for serving
☑️Directions:
Prepare the Filling:
Heat 1 tbsp oil in a skillet. Sauté onion for 2 minutes, then add garlic and ground meat.
Season with salt, pepper, and paprika. Cook until browned and no longer pink. Set aside to cool.
Make the Dough:
In a bowl, mix mashed potatoes, egg, flour, salt, and pepper until a soft dough forms. If too sticky, add a little more flour.
Assemble the Pancakes:
Dust your hands with flour. Scoop about 2–3 tbsp of dough and flatten into a disc.
Place 1 tbsp of the meat filling in the center and fold dough over, sealing edges to form a stuffed patty. Repeat.
Cook the Pancakes:
Heat oil or butter in a skillet over medium heat. Fry pancakes for 3–4 minutes per side until golden brown and crisp.
Serve:
Serve warm with sour cream or yogurt and chopped herbs, if desired.
