Low-Carb Sautéed Zucchini with Mushrooms

Ingredients:

  • 2 large zucchinis, sliced into half-moons
  • 2 cups mushrooms, sliced
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add mushrooms and cook for around 5 minutes until they start to brown.
  4. Stir in zucchini and thyme. Season with salt and pepper.
  5. Cook for another 7–10 minutes, stirring occasionally, until the zucchini is tender.
  6. (Optional) Sprinkle Parmesan cheese on top and allow it to melt.
  7. Garnish with chopped parsley and serve hot.
