Low-Carb Sautéed Zucchini with Mushrooms

Low-Carb Sautéed Zucchini with Mushrooms
Ingredients:
- 2 large zucchinis, sliced into half-moons
- 2 cups mushrooms, sliced
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Add mushrooms and cook for around 5 minutes until they start to brown.
- Stir in zucchini and thyme. Season with salt and pepper.
- Cook for another 7–10 minutes, stirring occasionally, until the zucchini is tender.
- (Optional) Sprinkle Parmesan cheese on top and allow it to melt.
- Garnish with chopped parsley and serve hot.
