Ingredients:
For the Steak:
2 ribeye or sirloin steaks, about 1 inch thick
Salt and black pepper, to taste
Olive oil, for grilling
For the Lemon Herb Butter:
1/2 cup unsalted butter, softened
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh chives, finely chopped
2 teaspoons lemon zest
1 clove garlic, minced
Salt and pepper, to taste
For the Fluffy Mashed Potatoes:
4 large potatoes, peeled and cubed
1/4 cup heavy cream
2 tablespoons unsalted butter
Salt and pepper, to taste
Instructions:
Prepare the Lemon Herb Butter:
In a small bowl, mix together the softened butter, parsley, chives, lemon zest, minced garlic, salt, and pepper.
Place the butter mixture on a piece of plastic wrap and roll into a log. Refrigerate until firm.
Cook the Steaks:
Season the steaks generously with salt and pepper.
Heat a grill or skillet over high heat and add a splash of olive oil.
Cook the steaks for 4-5 minutes on each side for medium-rare, or until desired doneness.
Let the steaks rest for a few minutes before serving.
Make the Mashed Potatoes:
Boil the potatoes in salted water until tender, about 15-20 minutes.
Drain and return to the pot.
Add the heavy cream and butter, and mash until smooth and fluffy. Season with salt and pepper.
Serve:
Slice the herb butter and place on top of the hot steaks so it melts beautifully.
Serve the steaks with a side of fluffy mashed potatoes.
Garnish with extra herbs if desired.
Quick Tips:
Steak Doneness: Use a meat thermometer to ensure your steak is cooked to your preferred level of doneness.
Herb Variations: Feel free to experiment with other herbs like tarragon or rosemary in the butter for different flavors.
