Ham with Madeira Mushroom Sauce
Ingredients:
- 4 slices of ham (about 200g / 7 oz)
- 250g / 8 oz button mushrooms, cleaned and sliced
- 1 shallot, finely chopped
- 2 garlic cloves, finely minced
- 1 tablespoon (15ml) olive oil
- 1/2 cup (120ml) Madeira wine
- 1/4 cup (60ml) chicken broth
- 1 tablespoon (15g) butter
- 1 tablespoon (15g) flour
- 1/4 cup (30g) crème fraîche
- Salt and freshly ground black pepper, to taste
- Fresh chopped parsley (optional), for garnish
Instructions:
- In a large skillet over medium heat, melt the butter. Add the shallot and garlic, and sauté for 2–3 minutes until softened.
- Add the mushrooms and cook for 5–7 minutes, until tender and lightly golden. Remove the mushrooms from the skillet and set aside.
- In the same skillet, heat the olive oil and sear the ham slices for 2–3 minutes on each side until slightly browned. Remove and set aside.
- Sprinkle the flour into the pan and cook, stirring constantly, for 1 minute.
- Gradually whisk in the Madeira wine and chicken broth to avoid lumps. Bring to a boil, then reduce heat and simmer for 2–3 minutes until slightly thickened.
- Stir in the crème fraîche and the reserved mushrooms. Season with salt and pepper to taste.
- Return the ham to the skillet and warm through in the sauce.
- Serve hot, garnished with fresh chopped parsley if desired.
