Ham with Madeira Mushroom Sauce

Ingredients:

  • 4 slices of ham (about 200g / 7 oz)
  • 250g / 8 oz button mushrooms, cleaned and sliced
  • 1 shallot, finely chopped
  • 2 garlic cloves, finely minced
  • 1 tablespoon (15ml) olive oil
  • 1/2 cup (120ml) Madeira wine
  • 1/4 cup (60ml) chicken broth
  • 1 tablespoon (15g) butter
  • 1 tablespoon (15g) flour
  • 1/4 cup (30g) crème fraîche
  • Salt and freshly ground black pepper, to taste
  • Fresh chopped parsley (optional), for garnish

Instructions:

  1. In a large skillet over medium heat, melt the butter. Add the shallot and garlic, and sauté for 2–3 minutes until softened.
  2. Add the mushrooms and cook for 5–7 minutes, until tender and lightly golden. Remove the mushrooms from the skillet and set aside.
  3. In the same skillet, heat the olive oil and sear the ham slices for 2–3 minutes on each side until slightly browned. Remove and set aside.
  4. Sprinkle the flour into the pan and cook, stirring constantly, for 1 minute.
  5. Gradually whisk in the Madeira wine and chicken broth to avoid lumps. Bring to a boil, then reduce heat and simmer for 2–3 minutes until slightly thickened.
  6. Stir in the crème fraîche and the reserved mushrooms. Season with salt and pepper to taste.
  7. Return the ham to the skillet and warm through in the sauce.
  8. Serve hot, garnished with fresh chopped parsley if desired.
