Greek Yogurt Parfait with Roasted Berries & Granola
Ingredients:
2 cups mixed berries (strawberries, blueberries, raspberries)
1 tbsp honey or maple syrup
1/2 tsp vanilla extract
2 cups Greek yogurt (plain or vanilla)
1 cup granola
Fresh mint, for garnish
Directions:
Preheat oven to 375°F (190°C). Toss berries with honey and vanilla extract, then spread on a baking sheet. Roast for 12–15 minutes, or until juicy and slightly caramelized. Let cool.
In serving glasses or bowls, layer Greek yogurt, a spoonful of roasted berries, and a handful of granola. Repeat layers as desired.
Top with extra roasted berries and garnish with fresh mint. Serve immediately or refrigerate until ready to enjoy.
