Greek Tomato Fritters (Domatokeftedes)

Ingredients

Produce

2 large tomatoes, finely chopped (drain excess juice)
½ red onion, finely diced
2 large garlic cloves, minced
½ bunch parsley, finely chopped
½ bunch dill, finely chopped
Zest of 1 lemon

Baking & Spices

85 g plain flour
½ tsp baking powder
½ tsp salt
Freshly ground black pepper, to taste

Instructions

1. Prepare the Tomatoes
Finely chop the tomatoes and place them in a strainer to remove excess liquid. Let them sit for about 10 minutes.

2. Mix the Vegetables and Herbs
In a large bowl, combine the drained tomatoes, red onion, garlic, parsley, dill, and lemon zest.

3. Add the Dry Ingredients
Stir in the flour, baking powder, salt, and pepper until just combined. The mixture should be thick enough to hold its shape; add a bit more flour if too wet.

4. Heat the Oil
Heat about 1 cm of oil in a skillet over medium heat (olive oil or a neutral oil works well).

5. Fry the Fritters
Drop heaping tablespoons of the batter into the pan. Flatten slightly and fry for about 2–3 minutes per side, or until golden and crisp. Do this in batches to avoid crowding the pan.

6. Drain and Serve
Transfer the fritters to a paper towel-lined plate to drain. Serve warm, optionally with tzatziki or a squeeze of lemon.
