Garlic Shrimp Crostini with Avocado & Crispy Onions

Ingredients:

For the Crostini:

– 1 baguette, sliced into ½-inch thick pieces

– 2 tbsp olive oil

– 1 garlic clove

– Salt to taste

For the Garlic Shrimp:

– 12-16 large shrimp, peeled & deveined

– 3 tbsp butter

– 4 garlic cloves, minced

– ½ tsp red pepper flakes (optional)

– 1 tbsp lemon juice

– Salt & black pepper to taste

– 1 tbsp chopped parsley

 

For the Avocado

– 1 large ripe avocado slice

– 1 tbsp lime juice

– Salt & pepper to taste

Toppings:

– ¼ cup crispy fried onions

– ½ cup fresh microgreens

– Edible flowers

– Herb oil

Herb Oil (Optional Drizzle):

– ¼ cup olive oil

– 2 tbsp fresh herbs (parsley, chives, basil)

– 1 tsp lemon zest

– Pinch of salt

Instructions: 

1. Prepare the Crostini:

– Preheat oven to 375°F (190°C).

– Brush baguette slices with olive oil, place on a baking sheet, and bake for 8-10 mins until golden and crisp.

– While still warm, rub each slice with a cut garlic clove for extra flavor.

 

2. Make the Garlic Shrimp:

– In a skillet, melt butter over medium heat. Add minced garlic and red pepper flakes, sauté for 30 sec until fragrant.

– Add shrimp, season with salt & pepper, and cook 2-3 mins per side until pink and opaque.

– Finish with lemon juice and parsley. Remove from heat.

3. Slice Avocado:

– Slice avocado with lime juice,

salt & pepper.

4. Herb Oil (Optional):

– Blend olive oil, fresh herbs, lemon zest, and salt until smooth. Strain if desired.

5. Assemble:

1. A layer of slice avocado on each crostini.

2. Top with 1-2 garlic shrimp.

3. Sprinkle crispy onions over the shrimp.

4. Arrange microgreens and edible flowers around the plate.

5. Drizzle with herb oil for a gourmet finish.
