Ingredients:
2 cups chicken breast, cubed
1 cup broccoli florets
1 cup spinach leaves
1/4 cup olive oil
1/2 cup chicken broth
1/4 cup grated Parmesan cheese
1 tbsp garlic, minced
Directions:
Sauté the Chicken:
Heat the olive oil in a large skillet over medium heat. Add the cubed chicken breast and cook for 5–7 minutes, stirring occasionally, until golden and fully cooked through.
Add the Garlic:
Stir in the minced garlic and sauté for 1 minute, allowing it to become fragrant without burning.
Add the Broccoli:
Toss in the broccoli florets and cook for 3–4 minutes until they begin to soften but still retain some crunch.
Deglaze with Broth:
Pour in the chicken broth and bring the mixture to a gentle simmer. Let it cook for another 3–4 minutes, allowing the flavors to meld and the broccoli to become tender.
Add Spinach:
Stir in the spinach leaves and cook just until wilted, about 1–2 minutes.
Finish with Parmesan:
Sprinkle the grated Parmesan cheese over the chicken and vegetables. Stir until the cheese melts slightly into the sauce, creating a light, savory coating.
Serve:
Serve hot as-is for a low-carb option or over rice, pasta, or quinoa for a heartier meal.
