GARLIC CHICKEN FRIED RICE 🍚🧄🍗
📋 Ingredients:
2 cups cooked white rice, chilled
2 chicken breasts, diced
2 cloves garlic, minced
1 cup mixed vegetables (peas, carrots, corn)
2 eggs, beaten
2 tbsp soy sauce
1 tbsp sesame oil
Salt and pepper, to taste
Green onions, chopped or parsley (optional, for garnish)
👩🍳 Directions:
1️⃣ Cook Chicken and Garlic:
In a large skillet or wok, heat a bit of oil over medium-high heat. Add diced chicken and minced garlic, and cook until the chicken is fully cooked and garlic is aromatic.
2️⃣ Scramble Eggs:
Push the chicken to one side of the skillet. On the empty side, pour in the beaten eggs and scramble until set.
3️⃣ Add Vegetables:
Stir in the mixed vegetables and cook for 2–3 minutes, until tender.
4️⃣ Add Rice:
Add the chilled rice, breaking up clumps with your spatula. Stir-fry everything together to combine.
5️⃣ Season:
Drizzle soy sauce and sesame oil over the mixture. Stir well until all ingredients are evenly coated and heated through. Season with salt and pepper to taste.
6️⃣ Garnish and Serve:
Top with chopped green onions, if desired. Serve hot and enjoy!
