Ingredients:
For the crust:
2 cups graham cracker crumbs
½ cup shredded coconut, toasted
½ cup unsalted butter, melted
¼ cup granulated sugar
For the filling:
3 (8 oz) packages cream cheese, softened
¾ cup granulated sugar
1 tsp vanilla extract
1 tbsp lime zest
¼ cup fresh lime juice
3 large eggs
½ cup unsweetened coconut milk (full-fat)
For the mango topping:
1 ½ cups mango puree (fresh or canned)
1 tbsp lime juice
1 tbsp cornstarch
2 tbsp water
For garnish:
Toasted coconut flakes
Lime zest
Mango slices or chunks
Instructions:
Preheat oven to 325°F (160°C). Line the bottom of a 9-inch springform pan with parchment paper.
In a medium bowl, mix graham cracker crumbs, toasted shredded coconut, sugar, and melted butter. Press the mixture evenly into the bottom and slightly up the sides of the prepared pan. Bake for 10 minutes, then let cool.
In a large bowl, beat the cream cheese until smooth and creamy. Add sugar, vanilla, lime zest, and lime juice and mix well. Add eggs one at a time, mixing just until combined. Stir in coconut milk.
Pour the filling into the prepared crust and smooth the top.
Bake for 50–60 minutes or until the center is just set with a slight wobble. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.
Transfer to the refrigerator and chill for at least 4 hours or overnight.
For the mango topping, whisk together mango puree, lime juice, cornstarch, and water in a small saucepan over medium heat. Cook, stirring constantly, until thickened. Cool completely before spreading over the chilled cheesecake.
Garnish with toasted coconut flakes, freshly grated lime zest, and a few slices or a mound of mango in the center.
