Cherry Chocolate Chip Cake
Ingredients
1 1/2 cups fresh or frozen pitted cherries
1 cup semi-sweet chocolate chips
2 cups all-purpose flour
1 1/2 cups sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 large eggs
1 cup buttermilk
1/2 cup unsalted butter, melted
1 tsp vanilla extract
Instructions
Preheat oven to 350Β°F (175Β°C). Grease and flour a 9-inch round cake pan.
In a bowl, whisk flour, baking powder, baking soda, and salt.
In another bowl, beat eggs and sugar until light and fluffy. Add melted butter, buttermilk, and vanilla, mix well.
Fold dry ingredients into wet until just combined. Gently fold in cherries and chocolate chips.
Pour batter into prepared pan. Bake 45β50 minutes or until a toothpick comes out clean.
Cool in pan 10 minutes, then transfer to a wire rack to cool completely.
