Cheesy Sriracha Cob Loaf Dip

1 white cob loaf
2 tbsp olive oil
2 tsp crushed garlic
6 green shallots, sliced
250g cream cheese, softened
1 cup sour cream
1 cup grated tasty cheese
1½ cups grated mozzarella
310g jar roasted pepper strips, chopped
3½ tsp sriracha salt seasoning
Tomatoes, to serve
Baby cucumbers, halved
Directions:
1 Preheat oven to 180C. Line a tray with baking paper.
2 Cut top off loaf, hollow out center, set bread pieces aside. Bake loaf for 12 minutes.
3 Sauté garlic and shallots in 1 tbsp oil. Stir in cream cheese, sour cream, tasty cheese, 1 cup mozzarella.
4 Mix in ¾ peppers and 1 tsp seasoning.
5 Toss bread in remaining oil and 2 tsp seasoning.
6 Fill cob with cheese mix, top with mozzarella, surround with bread pieces.
7 Bake 25 minutes until golden.
8 Garnish with remaining peppers, shallots, and seasoning. Serve with veg.
