Cheesy Cabbage Beef Skillet

Ingredients:

1 lb (450 g) ground beef

1 tbsp olive oil

1 small onion, chopped

3 cloves garlic, minced

1 small head of green cabbage, chopped (about 5 cups)

1 can (14 oz) diced tomatoes, drained

1 tsp smoked paprika

1 tsp salt (adjust to taste)

½ tsp black pepper

1 cup shredded cheddar cheese

½ cup shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Directions:

Cook the Beef: In a large skillet over medium heat, add the ground beef and cook until browned, about 6–8 minutes. Drain excess fat and set the beef aside.

Sauté the Aromatics: In the same skillet, heat olive oil. Add onion and cook for 3–4 minutes until softened. Stir in the garlic and cook for another 30 seconds until fragrant.

Add Cabbage and Tomatoes: Add the chopped cabbage and drained diced tomatoes to the skillet. Cook for 6–8 minutes, stirring occasionally, until the cabbage begins to soften.

Season and Combine: Add the cooked beef back into the skillet. Season with smoked paprika, salt, and pepper. Stir well to combine, and cook another 5 minutes until everything is heated through and the cabbage is tender.

Melt the Cheese: Sprinkle cheddar and mozzarella evenly over the top. Cover the skillet with a lid and let it sit on low heat for 2–3 minutes, or until the cheese is melted and gooey.

Serve and Enjoy: Garnish with chopped parsley and serve warm, either on its own or over rice or mashed potatoes for a complete meal.
