Cheesy Beef & Potato Burritos with Nacho Drizzle
Ingredients:
For the Filling:
1 tbsp olive oil
2 medium potatoes, peeled and diced small
Salt and pepper to taste
1/2 tsp smoked paprika
1 small onion, finely chopped
1 lb (450g) ground beef
2 garlic cloves, minced
1 tbsp taco seasoning (or mix of cumin, paprika, chili powder, oregano)
1/4 cup water
1 cup shredded cheddar or Monterey Jack cheese
For the Nacho Cheese Drizzle:
1 tbsp butter
1 tbsp all-purpose flour
3/4 cup milk
1 cup shredded sharp cheddar
1/4 tsp cayenne pepper or chili powder (optional)
Salt to taste
For Assembly:
4 large flour tortillas
Chopped tomatoes and fresh parsley or cilantro (for garnish)
Butter or oil for toasting the burritos
Directions:
Cook the Potatoes:
Heat olive oil in a skillet over medium heat. Add diced potatoes, season with salt, pepper, and smoked paprika. Cook, stirring occasionally, for about 10 minutes until golden and tender. Remove and set aside.
Prepare the Beef:
In the same skillet, add a touch more oil if needed. Sauté onions until soft, about 3 minutes.
Add ground beef and cook until browned. Drain excess fat if necessary.
Stir in minced garlic and taco seasoning, then pour in 1/4 cup water. Simmer for 3–4 minutes until well combined and slightly thickened.
Make the Nacho Cheese Sauce:
In a small saucepan, melt butter over medium heat. Stir in flour to form a roux and cook for 1 minute.
Slowly whisk in milk until smooth and slightly thickened.
Stir in shredded cheddar, cayenne (if using), and salt. Keep warm over low heat.
Assemble the Burritos:
On each tortilla, layer beef mixture, potatoes, and shredded cheese. Roll tightly like a burrito.
Toast the Burritos:
In a nonstick pan or skillet, melt a bit of butter and toast each burrito seam-side-down first for 2–3 minutes per side until golden and crisp.
Serve with Style:
Slice burritos in half, drizzle generously with nacho cheese sauce, and garnish with chopped tomatoes and fresh parsley or cilantro.
