Buckeye Bites
Ingredients:
For the Peanut Butter Filling:
– 1 cup creamy peanut butter
– 1/2 cup unsalted butter, softened
– 1 cup powdered sugar
– 1 teaspoon vanilla extract
For the Chocolate Coating:
– 1 1/2 cups semi-sweet chocolate chips
– 1 tablespoon vegetable oil (optional, for smoother melting)
Instructions:
Prepare the Peanut Butter Filling:
1. In a medium bowl, combine the creamy peanut butter and softened unsalted butter. Mix until smooth and well combined.
2. Gradually add the powdered sugar and vanilla extract, mixing until the mixture is smooth and forms a thick dough.
Shape the Bites:
3. Using your hands, scoop out small portions of the peanut butter mixture and roll them into balls, about 2.5 cm in diameter.
4. Place the rolled balls on a baking sheet lined with parchment paper. Refrigerate for about 30 minutes to firm up.
Prepare the Chocolate Coating:
5. In a microwave-safe bowl, combine the semi-sweet chocolate chips and vegetable oil (if using). Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
Coat the Bites:
6. Remove the peanut butter balls from the refrigerator. Using a fork, dip each ball into the melted chocolate, ensuring it is fully coated. Allow excess chocolate to drip off.
7. Return the coated bites to the parchment-lined baking sheet.
Chill and Serve:
8. Once all the bites are coated, refrigerate them for an additional 30 minutes to set the chocolate.
