Beef Lombardi Casserole
Ingredients:
- 1 lb (450 g) ground beef
- 1 small onion, chopped
- 2 cups cooked egg noodles
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1/2 cup sour cream
- 1/2 cup cottage cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
Instructions:
- Preheat your oven to 350°F (175°C).
- Cook the beef and onion in a skillet over medium heat until the beef is browned. Drain any excess fat.
- Add the tomatoes, tomato sauce, garlic powder, Italian seasoning, salt, and pepper to the skillet. Stir well and let the mixture simmer for about 5 minutes.
- In a separate bowl, combine the sour cream and cottage cheese. Stir in the cooked egg noodles until well coated.
- Assemble the casserole by spreading the noodle mixture evenly in a baking dish. Pour the meat sauce over the top, then sprinkle with shredded cheddar cheese.
- Bake uncovered for 25–30 minutes, or until the casserole is hot and bubbly, and the cheese is melted and golden on top.
Serve warm and enjoy!
