Beef Lombardi Casserole

Ingredients:

  • 1 lb (450 g) ground beef
  • 1 small onion, chopped
  • 2 cups cooked egg noodles
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1/2 cup sour cream
  • 1/2 cup cottage cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Cook the beef and onion in a skillet over medium heat until the beef is browned. Drain any excess fat.
  3. Add the tomatoes, tomato sauce, garlic powder, Italian seasoning, salt, and pepper to the skillet. Stir well and let the mixture simmer for about 5 minutes.
  4. In a separate bowl, combine the sour cream and cottage cheese. Stir in the cooked egg noodles until well coated.
  5. Assemble the casserole by spreading the noodle mixture evenly in a baking dish. Pour the meat sauce over the top, then sprinkle with shredded cheddar cheese.
  6. Bake uncovered for 25–30 minutes, or until the casserole is hot and bubbly, and the cheese is melted and golden on top.

Serve warm and enjoy!
