Beef and Cheese Chimichangas
Ingredients:
– 6 large flour tortillas
– 1 lb ground beef
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 1 teaspoon cumin
– 1 teaspoon chili powder
– ½ teaspoon salt
– ½ teaspoon black pepper
– 1 cup cheddar cheese, shredded
– ½ cup Monterey Jack cheese, shredded
– Vegetable oil (for frying)
– Salsa, sour cream, and guacamole (for serving)
Instructions:
1. Cook the Filling: In a skillet, cook the ground beef over medium heat until browned. Add the chopped onion and minced garlic, cooking until the onion is soft. Stir in cumin, chili powder, salt, and pepper. Remove from heat and mix in the cheddar and Monterey Jack cheeses until melted.
2. Assemble the Chimichangas: Place a generous amount of the beef and cheese mixture in the center of each tortilla. Fold in the sides and roll tightly to enclose the filling.
3. Fry the Chimichangas: Heat vegetable oil in a deep skillet over medium-high heat. Fry the chimichangas, seam side down, until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
4. Serve: Serve hot with salsa, sour cream, and guacamole. Enjoy your delicious chimichangas!
