Ingredients:
4 chicken breasts (you can also use thighs or chicken parts that you prefer)
250 g fresh mushrooms (in tin)
1 medium onion (finely chopped)
2 cloves of garlic (minced or pressed)
1 cup whipping cream or cream milk
1/2 cup chicken broth (you can use water with chicken broth cube)
2 tablespoons of butter.
1 tablespoon of the olive oil
Salt and pepper to taste
1/2 teaspoon thyme or Italian herbs (optional)
1/2 cup white wine (optional)
Preparation:
Cooking chicken: In a large skillet, heat the olive oil and butter. Add the chicken breasts, season with salt and pepper, and cook over medium-high heat until golden brown and cooked inside (about 6-7 minutes per side depending on thickness). Then remove them from the frying pan and reserve.
Prepare mushroom sauce: In the same skillet, add a little more butter if necessary, and saute the onion and garlic until transparent. Add the mushrooms and cook until they are soft and release their juice (about 5-7 minutes).
Add liquid and season: If you decide to use white wine, add it and let it reduce for 2-3 minutes. Then add the chicken broth, herbs, and whipping cream. Cook on medium-low heat, stirring occasionally, until sauce thickens slightly (about 5-10 minutes).
Combine Chicken with Gravy: Reincarnate the chicken breasts into the pan, covering them well with the mushroom sauce. Cook on low for about 5 minutes for the flavors to integrate and the chicken to soak in the sauce.
Serve: Rectify seasoning with salt and pepper if necessary. Serve chicken with sauce on top.
