Ingredients:
For the Apple Mixture:
4β5 medium apples (like Honeycrisp or Granny Smith), peeled, cored, and chopped
1/2 cup granulated sugar
1/2 cup brown sugar
1 tsp ground cinnamon
1 tbsp lemon juice
1 tbsp flour (to thicken)
For the Cake Base:
1/2 cup unsalted butter, softened
1 cup sugar
2 eggs
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 cup milk (or buttermilk)
Optional Topping (for glossy finish):
2 tbsp melted butter
2 tbsp brown sugar
1/2 tsp cinnamon
Instructions:
1. Preheat oven to 350Β°F (175Β°C). Grease and flour an 8Γ8 inch or 9Γ9 inch baking dish.
2. Prepare the apples:
Toss chopped apples with both sugars, cinnamon, lemon juice, and flour. Let sit while preparing the batter.
3. Make the cake batter:
Cream butter and sugar until light and fluffy.
Beat in eggs one at a time, then add vanilla.
In a separate bowl, whisk flour, baking powder, and salt.
Gradually add dry ingredients to the wet mixture, alternating with milk, mixing until just combined.
4. Assemble the cake:
Spread half the batter into the baking dish.
Layer all the apple mixture on top.
Spread the remaining batter on top as evenly as possible (itβs okay if some apples peek through).
Optional: Brush with melted butter and sprinkle brown sugar-cinnamon topping.
5. Bake for 40β50 minutes or until a toothpick inserted comes out clean and the top is golden.
6. Cool slightly, slice, and enjoy warmβoptionally with vanilla ice cream!
