Grilled King Prawns with Garlic and Parsley Butter¿
Ingredients
12 large king prawns (or giant shrimp), cleaned (keep the heads and shells for more flavor)
100g softened butter
4 garlic cloves, finely chopped
1 small bunch fresh parsley, chopped
1 tablespoon lemon juice
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1 pinch Espelette pepper (optional)
Preparation
1. Prepare the flavored butter:
In a bowl, combine the softened butter with the chopped garlic, parsley, lemon juice, salt, pepper, and Espelette pepper, if using.
Mix well until smooth.
2. Prepare the prawns:
Make a small cut down the back of the prawns to remove the intestines while retaining the shell.
Brush the prawns with a little olive oil to prevent them from sticking to the grill.
3. Cook the prawns:
Preheat the grill or a frying pan to medium-high heat.
Add the prawns and cook for about 2-3 minutes per side, until they turn pink and lightly charred.
While cooking, brush the prawns with the garlic and parsley butter to coat them well.
4. Serve:
Remove the prawns from the heat and drizzle with the remaining melted butter.
Serve immediately with lemon wedges and a fresh salad or fragrant rice.
