Ingredients:

For the Crust:

2 cups graham cracker crumbs

1/2 cup melted butter 🧈

1/4 cup sugar

For the Cheesecake Filling:

16 oz (450g) cream cheese, softened

1/2 cup sugar

2 large eggs 🥚

1 tsp vanilla extract

1/2 cup sour cream

For the Kiwi Topping:

4-5 ripe kiwis, peeled and sliced 🥝

1/2 cup apricot jam (or kiwi glaze)

2 tbsp water

Instructions:

1. Prepare the Crust:

Preheat the oven to 350°F (180°C).

In a bowl, mix the graham cracker crumbs, melted butter, and sugar.

Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.

2. Make the Cheesecake Filling:

In a large bowl, beat the cream cheese and sugar until smooth.

Add eggs one at a time, mixing well after each. Stir in vanilla and sour cream until creamy.

Pour the filling over the cooled crust.

3. Bake the Cheesecake:

Bake for 40-45 minutes, or until the center is just set.

Let it cool completely, then refrigerate for at least 4 hours or overnight.

4. Prepare the Kiwi Topping:

In a small saucepan, heat the apricot jam with water over low heat until smooth. Set aside to cool.

Arrange the kiwi slices beautifully on top of the cheesecake. Brush the glaze over the fruit for a glossy finish.
