Homemade Strawberry Shortcake (With Cream Biscuits)
Ingredients:
2 cups all-purpose flour
1 tablespoon baking powder
1/4 cup granulated sugar
1/2 teaspoon salt
1 1/2 cups heavy cream (plus extra for brushing)
1 teaspoon vanilla extract
1 pound fresh strawberries, hulled and sliced
1/4 cup sugar (for strawberries)
1 cup heavy whipping cream (cold)
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
Instructions:
1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
2. In a bowl, mix flour, baking powder, sugar, and salt. Add heavy cream and vanilla, stirring until just combined.
3. Turn dough onto a floured surface, pat into a 1-inch thick round, and cut into 6 rounds using a biscuit cutter.
4. Place on the baking sheet, brush tops with cream, and bake for 12-15 minutes until golden. Cool on a wire rack.
5. Toss strawberries with sugar and let sit for 15 minutes until juicy.
6. Whip heavy cream with powdered sugar and vanilla until soft peaks form.
7. Slice biscuits in half, layer with strawberries and whipped cream, then cap with the biscuit top. Add more berries and cream on top if desired.
