Grilled Chicken Tikka Skewers Recipe
Ingredients:
Boneless chicken (cut into cubes) – 500 gm
Thick curd (yogurt) – ½ cup
Ginger-garlic paste – 1½ tbsp
Lemon juice – 1 tbsp
Red chili powder – 1 tsp
Turmeric powder – ¼ tsp
Garam masala – 1 tsp
Coriander powder – 1 tsp
Cumin powder – ½ tsp
Kasuri methi (dry fenugreek leaves) – 1 tsp (crushed)
Mustard oil – 2 tbsp (or any oil)
Salt – to taste
Chopped coriander – for garnish
Onion and capsicum – cut into squares (optional, for skewers)
Butter – for basting/grilling
Instructions:
1. Prepare the Marinade:
In a large bowl, mix yogurt, ginger-garlic paste, lemon juice, chili powder, turmeric, garam masala, coriander powder, cumin powder, crushed kasuri methi, mustard oil, and salt.
2. Marinate Chicken:
Add chicken cubes (and veggies if using) to the marinade. Mix well. Cover and refrigerate for at least 2 hours, ideally overnight for best flavor.
3. Skewer the Chicken:
Thread marinated chicken and vegetables alternately onto skewers.
4. Grill or Cook:
Oven: Preheat to 220°C. Place skewers on a greased tray and grill for 20–25 mins, basting with butter and flipping halfway.
Pan: Heat a grill pan or tawa, brush with oil, and cook the skewers, turning and basting till fully cooked and charred.
BBQ: Grill on hot coals, basting occasionally for that authentic smoky flavor.
5. Serve Hot:
Garnish with lemon juice, chopped coriander, and sprinkle some chaat masala if desired. Serve with naan or rumali roti and mint chutney.
