Wet Ingredients – Mix together:

  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 cup grated carrots

Dry Ingredients – Mix together:

  • 1 cup flour
  • 1 cup quick-cooking oats
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda

Combine the wet and dry mixtures gently. Then add:

  • 1/2 cup raisins
  • 1/2 to 3/4 cup chopped nuts (I used walnuts and pecans)

Let the batter rest for a few minutes so the oats and flour can absorb the liquid.

Drop 12–14 spoonfuls of the batter onto baking sheets, spacing them out as the cookies will spread while baking.

Bake at 350Β°F (175Β°C) for about 11–12 minutes until set. Let the cookies cool completely.

For the frosting – mix vigorously in a bowl:

  • 1/2 cup butter or margarine
  • 1/2 cup cream cheese (slightly softened)
  • 1 tsp vanilla extract
  • 2 cups powdered sugar

Adjust by adding more powdered sugar or a bit of water to reach the desired consistency.
Refrigerate the frosting.

Once both the cookies and frosting are well chilled, frost the cookies.

Storage: Keep on the counter for up to 24 hours, or in the fridge for several days.
