Ingredients:

1 package refrigerated pie crusts
3 medium apples (such as Granny Smith or Honeycrisp), peeled and chopped
1/4 cup granulated sugar
1 tbsp brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tbsp lemon juice
1 tbsp cornstarch
1 tbsp butter, cut into small cubes
1 egg (for egg wash)

Directions:

Preheat your oven to 375Β°F (190Β°C).
Roll out the pie crusts and use a round cutter or a glass to cut circles large enough to line a muffin tin.

Place the circles of pie crust into the muffin tin, pressing gently to form little cups.

In a bowl, combine the chopped apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir until the apples are well coated.

Spoon the apple mixture into each mini pie crust, filling each about 3/4 full.

Dot the top of each pie with small pieces of butter.

In a small bowl, beat the egg and brush it over the edges of the crust for a golden finish.

Bake for 25-30 minutes, or until the crust is golden brown and the filling is bubbling.

Let the mini pies cool slightly before serving.
