Ingredients:

For the Ice Cream Base:

β€’ 2 cups (480ml) heavy cream

β€’ 1 cup (240ml) whole milk

β€’ ΒΎ cup (150g) granulated sugar

β€’ 1 tbsp vanilla extract

β€’ A pinch of salt

β€’ 4 large egg yolks

For the Moose Tracks Mix-ins:

β€’ Β½ cup (120g) peanut butter (creamy or crunchy)

β€’ Β½ cup (120ml) chocolate fudge sauce

β€’ Β½ cup (60g) mini peanut butter cups, chopped into small pieces

Directions:

Make the Ice Cream Base: In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, vanilla extract, and a pinch of salt. Heat over medium heat until the mixture is warm and the sugar is dissolved, but do not let it boil.

Whisk the Egg Yolks: In a separate bowl, whisk the egg yolks until they are pale and slightly thickened. Gradually pour about 1 cup of the warm cream mixture into the egg yolks, whisking constantly to temper the yolks.

Combine and Cook: Pour the egg yolk mixture back into the saucepan with the remaining cream mixture. Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes). Remove from heat and let it cool slightly.

Chill the Mixture: Transfer the mixture to a bowl, cover it with plastic wrap, and refrigerate until completely chilled (at least 4 hours or overnight).

Churn the Ice Cream: Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

Add the Mix-ins: In the last few minutes of churning, add the peanut butter, chocolate fudge sauce, and chopped mini peanut butter cups, allowing them to swirl into the ice cream.

Freeze: Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
